Are left poses actually "always" incorrect? What if its actually a good pose, with only the back of one leg showing(on dogz), exc?

Left facing poses just aren't accepted unless it's a left-facing pose show. Doesn't matter how good it is, it's facing the wrong way.
And people can tell when an image has been flipped to the right side, if it was taken from the left.

Most judges only will allow right facing poses, so if you enter a left facing pose, you'll be DQ'd no matter what.
For left poses, I usually just go by the hind leg alignment and if you can only see one hind leg, then it's correct imo. I've only gotten a few "good" left poses that I've used in PKC but never placed with them - in fact I rarely see left poses place there unless they're absolutely amazing. I only know of the FP Bloodhound that WAS made for left facing poses - everything else, including OBs, was hexed for right facing poses.

Okay, thanks ^.^ I believe I placed once in a show in PKC with a Neo Mastiff And Selena, I wouldn't flip an image like that, I'm the kind of person who's pretty afraid of getting in trouble haha XD ~Vanilla

It depends on the judge and the show. I'm fine with left-facing poses in mine, and because of this, I don't say "right-facing only" in any of my rules. But as a (general) rule, left-facing poses are much harder to get, and if you're using a newer PKC-accepted file, you'll find there's pressure on the hexers to make them right-pose-friendly. By this I mean that the files are hexed to look especially aligned when facing right, which often means that they're not so awesome looking when left-facing. But for me, and for many judges in the PKC, a kick-butt left-facing pose can be an asset; it can help you stand out from the crowd. On this forum and others like it, like Alex@Marvel said, I'd avoid left-facing poses unless the rules specifically say they're acceptable because some people won't place them no matter what; for many pose show judges, they're unacceptable de facto even if it's not clear that they're unacceptable de jure.
